Scelta Mushrooms manufactures flavourings rich in umami using a 'Waste2Taste' process. Mushroom parts and residues from mushroom processing which normally go to waste – such as mushroom stems and cooking juice – are being used to produce concentrate in liquid and spray-dried powder form. It serves as a mushroom base for soups and sauces. It can also be used as a flavour enhancer for a variety of dishes without imparting a pronounced mushroom flavour. It is a 100 per cent natural product with the potential to replace monosodium glutamate (MSG) and reduce the use of salt. The concentrate contains 95 per cent of the healthy vitamins and minerals from the mushroom.
Introducing funginal foods
The assortment recently has been extended with the products of Scelta Ceuticals. This new affiliate company develops products supporting the health of animals and humans at the level of the immune system. Scelta calls them funginal foods. These 100 per cent natural products are based on wholesome fungi. An example is the Almond mushroom, which contains 1,3-1,6 beta glucans and Ergosterol. Beta glucans modulate the immune system, while Ergosterol is important for the absorption of calcium. Extensive research has demonstrated that these substances support and modulate the immune systems of humans and animals. A properly functioning immune system is of course very important for health; it protects us against harmful outside influences.
